Captain Rodney’s Private Reserve- Boucan Glaze is his original famous glaze made near Bell Buckle, Tennessee. It’s made with Jamaican Scotch Bonnet Peppers, pure cane sugar and Tennessee grown bell peppers! It’s a little sweet, a little spicy and perfectly delicious in this cheese dip. Captain Rodney calls it a cheese bake, but whatever you decide to call it, it’s a winner!

So here’s what you’ll need to make this easy cheese dip recipe!
CAPTAIN RODNEY’S BOUCAN PEPPER GLAZE: You can find it online here! If you can’t find it locally, I highly suggest ordering it. Each jar can make 6 recipes of this cheese dip and it’s oh so worth it!
What can you substitute for Captain Rodney’s Boucan Glaze? Fear not! If you can’t find Captain Rodney’s glaze and don’t want to order it online, then I suggest using a red pepper jelly. Now, I would warm it slightly both when mixing it into the dip and then again when drizzling the remainder on top after baking. This will help it pour more easily. The taste will still be *delicious*!
CHEDDAR CHEESE: If you have time, grate your own cheddar cheese for the best flavor but pre-bagged cheddar cheese will work too!
CREAM CHEESE: You can use lowfat or regular cream cheese. TIP: Allow the cream cheese to come to room temperature for quicker mixing.
MAYONNAISE: Use a high quality mayo like Duke’s or Hellman’s.
GREEN ONIONS: You can sub in chives if you have them!
BUTTER CRACKERS: You can use Ritz crackers, Club crackers, Townhouse crackers, whatever you have on hand!
BACON: Use real, crispy bacon or bacon bits, whatever you prefer! I like real bacon crumbles for the best flavor.
How to Make Captain Rodney’s Dip
This dip is SUPER easy to make!
- Stir together mayo, cream cheese, cheddar cheese, bacon, green onion and half the Captain Rodney’s Boucan Glaze (or warm pepper jelly).
- Spread the mixture into an oven-safe baking dish.
- Top with crushed crackers.
- Bake at 350 degrees for 15 minutes.
- Remove from oven and sprinkle bacon on top and then drizzle on remaining boucan glaze or warmed pepper jelly. I like to add more chopped green onions on top too.

Captain Rodney’s Dip
Ingredients
- 1/2 cup Mayonnaise
- 8 ounces cream cheese (softened (room temperature))
- 2 cups cheddar cheese (shredded)
- 2 green onions (chopped)
- 6 crackers (crumbled (like Ritz))
- 6 slices bacon (cooked and crumbled (or 1/2 cup of bacon bits))
- 1/2 cup Captain Rodney's Boucan Glaze (*divided* substitution: red pepper jelly (warmed))
Garnishes
- crispy bacon
- chopped green onions
Instructions
- Preheat the oven to 350℉. In a mixing bowl, stir together softened cream cheese, mayonnaise, grated cheddar cheese, chopped green onions and 1/4 cup of the Boucan Glaze or warm pepper jelly.
- Spread mixture into a baking dish. Top with crushed butter crackers.
- Bake for 15-20 minutes. Remove from oven and top with extra crispy bacon, drizzle on the remaining 1/4 cup of the Boucan Glaze. Garnish with extra chopped green onions.
- Serve with crackers, toast points, tortilla chips or veggie sticks! Enjoy!
