Why You’ll Love these Egg Salad Tea Sandwiches!
These egg salad tea sandwiches are the perfect way to add a fancy touch to your tea party, baby shower, or Mother’s Day celebration. They’re a lovely addition to a green salad or as part of a larger spread for a delightful afternoon tea experience.
They’re absolutely delicious, creamy and simple to make!
Serving & Presentation
- I love to trim the crusts to these tea sandwiches. It makes them smaller so they’re more dainty in size and perfect for enjoying with other appetizers.
- Arrange the egg salad tea sandwiches on a serving platter, and garnish with fresh watercress or your favorite herbs.
- For an extra touch of elegance, consider adding slices of red onion or avocado on top.
Recipe Variations
- Experiment with different ingredients like plain yogurt or sour cream for a creamy twist.
- Change up the herbs! Try chopped green onion, parsley, thyme, chives, etc.
- Try an avocado egg salad variation by incorporating mashed avocado into the mixture.
- Love some spice? Add a drop or two of hot sauce or a bit of cayenne pepper for a kick.
- Add some protein to make a heartier sandwich. Try finely chopped chicken or tuna. You could even add in a bit of chopped bacon.
Prep Egg Salad Tea Sandwiches in Advance
Save yourself some time and prep the egg salad in advance. Store it in an airtight container or a bowl covered with plastic wrap in the refrigerator until ready to assemble your sandwiches.
Alternatively, you can prep the made finger sandwiches and store in the refrigerator as well. Bread can dry out some when in the refrigerator so I prefer to limit it to a few hours before the party.

Egg Salad Tea Sandwiches
Ingredients
- 4 large eggs
- 1/3 cup mayonnaise (high-qaulity, such as Duke's or Hellman's mayonnaise )
- 1 teaspoon mustard (Dijon or yellow)
- 1 pinch sea salt
- 1 pinch ground black pepper
- 2 tsp parsley (chopped – or chives, green onion or other fresh herb)
- 8 slices white bread
Instructions
Prepare the Hard-Boiled Eggs
- Place eggs in a medium pot and cover them with enough cold water. Bring the water to a boil over high heat, then reduce to medium heat and let them simmer for about 11 minutes.
- Drain the water and place the eggs in a bowl with cool water and ice cubes to stop the cooking process.Peel the eggs and chop them finely.
Mix Egg Salad
- In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, dijon mustard, salt, pepper, and chopped parsley or chives.
Assemble the Tea Sandwiches
- Spread the egg salad mixture evenly over four slices of bread. Top each with another bread slice, creating four sandwiches.
- For best results, use a serrated bread knife and a gentle sawing motion to trim the crusts off the bread slices for a polished look. Carefully cut each sandwich in two triangles or use a round cookie cutter to cut out round sandwiches.
