Ingredients
  

  • 4 large eggs
  • 1/3 cup mayonnaise (high-qaulity, such as Duke's or Hellman's mayonnaise )
  • 1 teaspoon mustard (Dijon or yellow)
  • 1 pinch sea salt
  • 1 pinch ground black pepper
  • 2 tsp parsley (chopped – or chives, green onion or other fresh herb)
  • 8 slices white bread

Instructions
 

Prepare the Hard-Boiled Eggs

  • Place eggs in a medium pot and cover them with enough cold water. Bring the water to a boil over high heat, then reduce to medium heat and let them simmer for about 11 minutes.
  • Drain the water and place the eggs in a bowl with cool water and ice cubes to stop the cooking process.Peel the eggs and chop them finely.

Mix Egg Salad

  • In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, dijon mustard, salt, pepper, and chopped parsley or chives.

Assemble the Tea Sandwiches

  • Spread the egg salad mixture evenly over four slices of bread. Top each with another bread slice, creating four sandwiches.
  • For best results, use a serrated bread knife and a gentle sawing motion to trim the crusts off the bread slices for a polished look. Carefully cut each sandwich in two triangles or use a round cookie cutter to cut out round sandwiches.
