Pineapple Mango Salsa

Give me tortilla chips and a fun salsa, and I’ll be happy all summer long! While I love classic restaurant-style salsa, in the summer I love something a bit more tropical! This pineapple-mango salsa hits the spot!
I typically have fresh pineapple all summer long, my entire family loves it! So I save a couple of cups back to chop up for this easy summer salsa. Same with mango, it’s my husband’s favorite fruit.

Pineapple Mango Salsa Ingredients
Pineapple: The first star of the show! You really want ripe pineapple for that juicy, sweet flavor!
Mango: The second star of the show, delicious mango!
Red Onion: If you want to lessen the bite of the red onion, soak the diced red onion in a bowl of cold water for about 10 minutes.
Tomatoes: Use any tomato variety you have on hand like cherry tomatoes, grape tomatoes or a diced roma tomato.
Jalapeno: I like to add a diced jalapeno, deseeded, but you can certainly leave it out if you prefer. Or add more and keep the seeds in for an extra spicy kick!
Cilantro: Lots of fresh chopped cilantro brings this whole salsa together!
Lime Juice: Squeeze in the juice of one whole fresh lime! You can even add a bit of lime zest too if you like.
Salt: I start with 1/2 teaspoon of salt and add more to taste.
Salsa Tips:
- Use ripe fruit for the best flavor!
- Deseed your jalapeno unless you like a spicy kick!
- You can certainly dice your veggies and fruit with a knife, but if you want to make your life a lot easier… I suggest this chopper!
- Add a sprinkle of salt and fresh cilantro just before serving!

- 2/3 medium red onion (diced)
- 1 cup cherry tomatoes (chopped)
