Instructions
Prepare the Hard-Boiled Eggs
Place eggs in a medium pot and cover them with enough cold water. Bring the water to a boil over high heat, then reduce to medium heat and let them simmer for about 11 minutes.
Drain the water and place the eggs in a bowl with cool water and ice cubes to stop the cooking process.Peel the eggs and chop them finely.
Mix Egg Salad
In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, dijon mustard, salt, pepper, and chopped parsley or chives.
Assemble the Tea Sandwiches
Spread the egg salad mixture evenly over four slices of bread. Top each with another bread slice, creating four sandwiches.
For best results, use a serrated bread knife and a gentle sawing motion to trim the crusts off the bread slices for a polished look. Carefully cut each sandwich in two triangles or use a round cookie cutter to cut out round sandwiches.
