Ingredients
  

  • 8 ounces cream cheese (softened to room temperature)
  • 1 cup sour cream
  • 1 (10 oz.) package frozen spinach (thawed, drained and chopped (or 16 oz fresh spinach, chopped))
  • 2 cups cheddar cheese (shredded)

Instructions
 

  • Preheat the oven to 350℉
  • Thaw and drain the frozen spinach, and wring out all the excess liquid. If using fresh spinach, simple chop spinach (it will wilt in the baking process).
  • In a medium mixing bowl, stir together cream cheese, sour cream, chopped spinach and shredded cheddar cheese until fully combined. If you want to reserve some cheese to sprinkle on top, do so at this step. I usually mix in 1 1/2 cups of cheese and reserve 1/2 cup to sprinkle on top before baking.
  • Transfer mixture into a small oven-safe baking dish and bake for 20 to 25 minutes or until bubbly. If you want your cheese to be more browned, turn to broil for 2-3 minutes.
  • Serve warm with tortilla chips, veggie slices, baguette slices, crostini, etc.
