Stuffed Endive with Goat Cheese and Walnuts

An easy yet fancy appetizer, these stuffed endive are topped with delicious ingredients like pears, crispy prosciutto, toasted walnuts and a honey drizzle!

Ingredients
  

  • 2 large endives
  • 4 ounces goat cheese (herbed or original, softened)
  • 1 pear (finely chopped)
  • 1/4 cup walnuts (toasted and chopped)
  • 4 slices prosciutto (crisped and crumbled)
  • 1 tbsp chives (finely diced)
  • 2 tbsp honey
  • salt and black pepper (to taste)

Instructions
 

  • To crisp your prosciutto, simply place it in a non-stick skillet or frying pan and cook for 1-2 minutes per side. Remove and crumble into small bites.
  • Carefully separate the endive leaves, discarding any outer leaves that are wilted or damaged.Rinse the leaves under cold water and pat them dry with paper towels.
  • Spread a thin layer of herbed goat cheese (or plain, original goat cheese if that's what you have) along the bottom of each endive leaf.
  • Sprinkle chopped pears, crispy prosciutto, and toasted walnuts over the goat cheese.
  • Repeat with the remaining endive leaves.
  • Just before serving, drizzle honey over the stuffed endive. Sprinkle on diced chives over top. Enjoy!
