Ingredients
  

  • 30 ounces (2 cans) black eyed peas (drained and rinsed)
  • 15 ounces (1 can) corn (drained and rinsed)
  • 1 red bell pepper (diced)
  • 1/3 red onion (diced)
  • 1 teaspoon cumin
  • 2 green onions (diced)
  • 1/4 cup cilantro (chopped)
  • 2 ripe avocados (cubed)
  • 2 tablespoons fresh lime juice
  • salt (to taste)
  • pepper (to taste)

Instructions
 

  • In a large bowl, combine black eyed peas, corn, red bell pepper, red onion, cumin, cilantro, and green onion.
  • Gently fold in cubed avocado.
  • Add salt and pepper, to taste.
  • Serve with your favorite chips!
