- 15 ounces (1 can) corn (drained and rinsed)
- 1 red bell pepper (diced)
- 1/3 red onion (diced)
- 1 teaspoon cumin
- 2 green onions (diced)
- 1/4 cup cilantro (chopped)
- 2 ripe avocados (cubed)
- 2 tablespoons fresh lime juice
- salt (to taste)
- pepper (to taste)
In a large bowl, combine black eyed peas, corn, red bell pepper, red onion, cumin, cilantro, and green onion.
Gently fold in cubed avocado.
Add salt and pepper, to taste.
