Spooky Eyeball Olive Puffs
The easiest Halloween party appetizer, these cheese olive puffs are made with puff pastry, pimento-stuffed green olives and cheddar cheese.

- 1 17.25-ounce package of frozen puff pastry (thawed)
- 24 pimento-stuffed green olives
- 1/4 cup finely shredded cheddar cheese
- 1 egg
Preheat oven to 400°F.
Carefully cut your thawed puff pastry sheets into 24 strips. Each strip should be about 6" by 1/2".
Whisk together egg with 1 tablespoon of water to make an egg wash. Set aside.
Sprinkle cheddar cheese on each strip of puff pastry.
At one end of the puff pastry strip, place an olive and carefully roll the puff pastry around the olive into a pinwheel shape.
Pinch the open seam of each olive puff and brush the puff with the egg wash.
Place each olive puff (olive side up) into a lightly greased mini muffin pan.
Bake for 20 minutes or until cheese is melted and puff pastry is golden.
