Shrimp Po' Boys
- 12 ounces popcorn shrimp (baked or fried )
- 2 roma tomatoes (thinly sliced)
- 6 lettuce leaves
- 1/4 red onion (thinly sliced)
- 6 mini hoagie rolls (sliced in half)
Aioli
- 1/2 cup mayonnaise
- 1 clove garlic (minced)
- 1/2 tsp lemon juice
- 1 tsp paprika
- 1 tsp dijon mustard
- 1 tsp sriracha (or hot sauce of choice (optional))
Assemble Po' Boys
Spread aioli on each hoagie roll. Place a tomato slice, red onion slice, and lettuce inside each hoagie roll.
Fill each roll with popcorn shrimp (about 6-8 per roll).
