Ingredients
  

Shrimp Po' Boys

  • 12 ounces popcorn shrimp (baked or fried )
  • 2 roma tomatoes (thinly sliced)
  • 6 lettuce leaves
  • 1/4 red onion (thinly sliced)
  • 6 mini hoagie rolls (sliced in half)

Aioli

  • 1/2 cup mayonnaise
  • 1 clove garlic (minced)
  • 1/2 tsp lemon juice
  • 1 tsp paprika
  • 1 tsp dijon mustard
  • 1 tsp sriracha (or hot sauce of choice (optional))

Instructions
 

Assemble Po' Boys

  • Spread aioli on each hoagie roll. Place a tomato slice, red onion slice, and lettuce inside each hoagie roll.
  • Fill each roll with popcorn shrimp (about 6-8 per roll).

For the Aioli

  • Combine all ingredients and stir well. Refrigerate until ready to spread on po' boys.
